This Is A Special Knife And It Will Be Sharpened With A One Side Bevel
This is a hand made knife used in the Korean fish markets.
The traditional way to sharpen these knives is with a bevel on one side only.
The steps are the same for sharpening a two sided standard beveled edge, you just hold the knife at a different angle to the stone.
